Curry Paste

All South East Asian cuisines rely very heavily on using curry pastes. Common ingredients are spices and fresh ingredients such as shallots, garlic, chillies, coriander etc. Ingredients for the curry paste are ground together, traditionally with a mortar and pestle and non-traditionally with an electric processor or mincer. We at Wok on Inn stir fry our curry paste with old before adding other ingredients to release the aromatics and flavours from the spices in the paste.
